Gammon and sage chicken

The days are getting shorter as we slip into autumn and now's the time to uncover some delicious earthy flavours and colourful ingredients to brighten up the darker evenings. Ingredients

  • 4 chicken thighs, skin removed
  • 1 gammon steak, chopped
  • 2 red onions, finely diced
  • 2 garlic cloves, crushed
  • 200g swede, peeled and diced
  • 1 tbsp soy sauce
  • 1 tbsp runny honey
  • 150ml chicken stock
  • 1 tbsp tomato puree
  • 1 tbsp chopped fresh sage
  • salt and freshly ground black pepper

Cooking Instructions

  1. Preheat the oven to 200C, 400F, Gas Mark 6.
  2. Place all the ingredients in a large bowl and mix well. Transfer to a roasting tray and cook in the oven for 30-35 minutes until the chicken is cooked through.
  3. Serve with lightly steamed greens and mashed potato.
