A simple twist on a traditional soup.

2 large leeks, chopped
300g sweet potato, peeled and diced
2 garlic cloves, crushed
1 litre vegetable stock
300ml semi skimmed milk
fresh chives, to garnish
- In a non-stick saucepan dry-fry the leeks for 1-2 minutes until soft.
- Add the potatoes, garlic and stock and bring to a gentle simmer. Cook until the potato is soft.
- Add the milk and bring back up to near boiling. Sprinkle with chives and serve.
